CHAMP - or Poundies Recipe

Poundies RecipeI know, I know - another potato recipe! Well, this is St. Patrick’s Day! The big difference between Champ and Colcannon is that Champ is pure potato, in all it’s creamy goodness. More common in Northern Ireland, this makes an excellent, hearty side dish to a plated dinner or a buffet - especially if you are inviting people you think might turn their noses up to the cabbage in the Colcannon.

 

 

Ingredients

  • 8 potatoes
  • 6 scallions (green onions)
  • 1/4 pound of butter
  • 1/2 pint of milk
  • salt and pepper to taste

Recipe:

Peel and boil the potatoes. Drain, add milk, salt, and pepper, and mash. Chop the scallions and add to mashed potatoes. Melt butter, and serve potatoes with wells of the melted butter.

Serves

: 4 - 6 guests
